The data shows that grass fed beef are rich in fats promoting health and low in fats that are link to diseases.  All food fats are a blend of different saturated and unsaturated fats. The unsaturated fats are the healthier fats which are both polyunsaturated and monounsaturated. The wagyu meat are genetically superior to most western beef both in tenderness and marbling as well as levels of unsaturated fats. Additionally, when we move away from grain feed to grass fed beef we can realize a far greater increase in healthy unsaturated fats.   The essential omega 3s and omega 6’s are types of polyunsaturated fats. After much clinical investigation it has been determined that our diets should consist of an omega 6 to omega 3 ratio of 4:1. Higher ratios of omega 6 to omega 3 are associated with health problems. Grass feed beef have been shown to have omega 6 to omega 3 ratios as low as 3:1 whereas grain fed beef can be as high as 20:1. When the proper balance of omega 6 to omega 3 is maintained it has been shown to prevent diseases such as coronary artery disease, hypertension, arthritis, cancer and other inflammatory and autoimmune disorders.
